Blueberry baked oats that taste like you're eating dessert for breakfast!

Breakfast is my all-time favorite meal of the day. I wake up every morning around 7am and crave something sweet with a big cup of (strong) coffee. This is exactly where my Baked Oats recipe comes in handy. 

I prep a big batch of baked oats one night and then have my morning meals ready to go for the next few days. When I'm headed out for a work meeting, I can quickly pop a square in a reusable container and top it with some nut butter and fruit.

And, if I'm reallllyy craving something sweet, I'll add a little bit of jam or just a few chocolate chips.. Microwave it for 10-15 seconds and a tasty dessert-for-breakfast is served. Now where's my coffee? 

Blueberry Baked Oats 

Makes about 9 squares 

 Ingredients:

2 cups old fashioned oats

1½ cup milk (skim, almond, or any milk of choice)

1 teaspoon baking powder 

2 teaspoons chia seeds

1 teaspoon vanilla extract

dash of cinnamon

¼ to ½ cup brown sugar 

½ cup blueberries, fresh or frozen (may substitute with any berries)

optional: sliced almonds

 

Preparation:

Preheat oven to 350 degrees F. Mist baking dish with non-stick oil and set aside. In a large bowl, mix all ingredients together. Pour batter into baking dish, and use a spoon to distribute the oat mixture evenly throughout. Bake for 30-40 minutes, or until oats are golden brown. Serve warm, or refrigerate until ready to serve. 

When ready to enjoy, microwave a square for about 15 seconds, and top with Greek yogurt or nut butter and additional fruit. Enjoy!
